Caymus Vineyards 2001 Special Selection Cabernet Sauvignon (California)
Caymus Special Selection is a rite of passage into California’s Cult Wine world. The 2001 vintage is often regarded as one California’s richest Cab’s. The nose is a bouquet of cigar box, cassis, black cherry, and coffee beans. Lavish, fruit forward, flavors of black cherry, plum, licorice and mocha are to be enjoyed by the reveler. The dry, balanced, palate begins strong and delivers elegant tannins. The finish unfortunately falls just short of “long”, and trails off too unexpectedly, revealing the wine’s youthfulness.

Dalla Valle Vineyards 2000 Cabernet Sauvignon (California)
Every now and then I witness wine pouring from a bottle in such a way that I call it a “Zen Pour”, and this is such a wine. An onyx core and violet rim announce intriguing aromas of cigar box, blackberry, plum and licorice. You know this is going to be a great Cab! Elegant tannins, great balance between fruit and acidity, and terrific viscosity create a memorable palate. Dry with fruit forward flavors unctuous black cherry, mocha and subtle mint declares this wine to be an outstanding textbook example of Cabernet Sauvignon!

I really liked this Cab. Boasting an inviting deep violet core, this wine offers terrific balance and structure. Aromas of black cherry, berries, cigar box and cocoa dominate. The palate reveals soft tannins and medium body. Dry, fruit forward flavors of blackberry, licorice, cocoa, and pencil shaving are sure to please. Expect a long, powerful finish. This is a terrific wine.
